Philippe Chavy Bourgogne Chardonnay, Burgundy, France 2021

White wine. Burgundy, France. Biodynamic. 100% Chardonnay. A Bourgogne Blanc that punches well above its weight. Most of the fruit comes from Puligny-Montrachet and the rest comes from Meursault. The vines are just on the wrong side of the line to qualify for village designations. This is an elegant and complex wine, with flavors of quince, apple, yellow citrus, and plenty of minerality. The acidity is bright and the finish is long. While this wine is easy to drink on its own, try it with chicken braised with tarragon and white wine and a touch of cream.
